Have a Happy and Safe Halloween
Ingredients:
All purpose flour - 1 2/3 cups
Baking powder - 1/4 tsp
Baking soda - 1 tsp
Ground Cinnamon - 1 tsp
Ground Nutmeg - 1 tsp
Ground Cloves - 1 tsp
Sugar - 1 1/2 cups
Pumpkin Puree - 1 cup
Canola Oil - 1/2 cup
Water - 1/2 cup
Flax seed powder - 2 TBSP mixed with 6 TBSP of water
3/4 cup walnuts (Optional)
Method:
All purpose flour - 1 2/3 cups

Pumpkin Puree - 1 cup
Canola Oil - 1/2 cup
Water - 1/2 cup
Flax seed powder - 2 TBSP mixed with 6 TBSP of water
3/4 cup walnuts (Optional)
Method:
- Pre-heat oven to 400C.
- In a large bowl combine the flour, baking powder, baking soda and all the spices. Mix well.
- Add the sugar and mix thoroughly.
- Now add the pumpkin puree, oil, water, flax seed powder mixed with water and the chopped nuts. Mix well.
- Line a 12-cup muffin pan with liners and spray with non stick cooking spray.
- Fill the muffin cups evenly with the batter (about 2/3 full).
- Bake it in the pre-heated oven for about 20-25 minutes or until a tooth pick inserted come out clean.
