Ingredients:
- Russet Potatoes - 3, large
- Olive oil or Coconut oil - 2 tbsp
- Finely chopped coriander leaves - for garnishing
For the Spice Mix:
- Coriander powder - 3/4 tsp
- Cumin powder - 3/4 tsp
- Red chili powder - 1 tsp
- Ground black pepper - 1/2 tsp
- Mango powder - 1/2 tsp
- Kasoori methi - 1 tsp
- Turmeric powder - 1/4 tsp
- Salt - 1 tsp
- Optional: Onion powder - 3/4 tsp and Garlic powder 1/2 tsp
Method:
- Preheat oven to 425 F. Line a baking tray with foil or parchment paper.
- Wash, peel and cut the potatoes into finger size strips and place it in water.
- Combine all the spice mix ingredients.
- Pat dry the potato strips well in a kitchen towel or paper towel.
- Place the potato strips on the tray and add oil and coat well.
- Sprinkle desired amount of spice mix and rub the potato strips. Make sure all the sides are coated well. Arrange potatoes in a single layer on the baking tray.
- Bake for 35 to 40 minutes, turning the fries halfway through. Bake until golden brown and crispy. Sprinkle coriander leaves before serving.
- Serve hot with ketchup or any dip.
